我想關於打奶泡是否真得&ldquo;不能&rdquo;使用低脂鮮奶</p><p>
</p><p>
這點 需要討論 而非&ldquo;絕對&rdquo;</p><p>
</p><p>
我 不喜歡全脂的重重奶味影響我咖啡的風味</p><p>
</p><p>
也不知道加了多少,奶油,香料跟奶粉</p><p>
</p><p>
無法在製作拿鐵或是卡布時使牛奶與咖啡達到相互呼應的感覺</p><p>
</p><p>
因爲全脂的乳味重</p><p>
</p><p>
尤其是林鳳營產品(雖然它很好打奶泡)</p><p>
</p><p>
所以我一向是使用低脂鮮奶</p><p>
</p><p>
最常使用的是味全的低脂(非林鳳營)</p><p>
</p><p>
除了不喜歡乳味影響咖啡之外</p><p>
</p><p>
也希望喝咖啡不要攝取太多的脂肪,以免發胖</p><p>
</p><p>
所以 我覺得使用全脂或是低脂沒差</p><p>
</p><p>
視個人對於脂肪的接受度</p><p>
</p><p>
以及&ldquo;咖啡+牛奶&rdquo;的個人風味喜好取向</p><p>
</p><p>
因爲低脂一樣可以打得出漂亮、綿密的奶泡</p><p>
</p><p>
我也一樣拉了花、做得出卡布、做得出分層拿鐵</p><p>
</p><p>
甚至低脂乳不經加熱拿來用手拉奶泡壺來製做冰奶泡,再取來做分層冰拿鐵</p><p>
</p><p>
也都表現得很好</p><p>
</p><p>
並不覺得打奶泡非得要用&ldquo;全脂&rdquo;不可</p><p>
</p><p>
在煌鼎&ldquo;來杯天才豆奶Latte?&rdquo;一文中</p><p>
</p><p>
提到:&ldquo;奶泡的形成並非乳脂肪,許多人都有此誤解。</p><p>
</p><p>
若奶泡的形成爲乳脂肪的話,照理說低脂牛奶(乳脂%0.2以下)的奶泡應打不太起來纔對,</p><p>
</p><p>
但事實不然,低脂奶照樣打出綿密的奶泡。</p><p>
</p><p>
原因很簡單,低脂牛奶仍保有形成奶泡的乳蛋白。所以打不打得出奶泡,不關乳脂肪的事。&rdquo;</p><p>
</p><p>
全脂、低脂我都順利打得出來奶泡</p><p>
</p><p>
這個論理我想應該站得住腳,也相當認同。</p><p>
</p><p>
牛乳能起泡 , 是因爲它所含的蛋白質聚集成薄膜包住空氣 , 形成氣泡隔間 , 阻止水的強大內聚力拉破泡沬 ,</p><p>
</p><p>
有些牛奶比其他牛乳還適合打成泡沬 , 因爲乳清蛋白質是關鍵的穩定劑 , 添加蛋白質強化的牛乳 ( 通常爲脫脂及低脂牛乳 ) 最容易起泡沬 , 不過 , 全脂泡沬的質地及味道更濃。 製作奶泡 的牛乳越新鮮越好 , 因爲開始變酸的牛乳在加熱時會凝固 .</p><p>

在這本書中對於奶泡的說明並沒有提到牛奶中的脂肪 , 以食物料理的書對於奶泡的說明與我在咖啡界中聽到的有著很大的不同 , 在不少料理中也會出現奶泡 , 有時在義式濃湯上也都會用些許奶泡在濃湯上增加口感與味道的平衡 . 奶泡的形成原因在於牛奶中的蛋白質 . 所以如果因爲季節不同或牛的食物不同 , 造成乳源的牛奶中的蛋白質含量不同 , 才變成有時奶泡不好打或打出的奶泡品質不好 , 而不是推說那些季節的牛奶乳脂含量較低所以打不出好奶泡 .</p><p>
</p><p><strong>所以說,決定奶泡的狀態、多少、維持時間的,是蛋白質,而不是脂肪,換句話說,全脂、低脂、脫脂牛奶打奶泡根本沒有區別,只是在飲用是有口感風味上的差異而已</strong></p><p>
</p><p>
當然 我並不是在推廣做花式咖啡用&ldquo;低脂&rdquo;的鮮奶比較好</p><p>
</p><p>
只是我目前還沒找到比較好的&ldquo;全脂&rdquo;罷了!</p><p>
</p><p>
而我個人的偏好是味全的低脂</p><p>
</p><p>
但是還是會極力找尋好的全脂鮮乳的。</p></li><li><p>
