日前,來自全世界的咖啡愛好者們齊聚韓國首都首爾,共同參加了最新一屆 2017 年世界咖啡師大賽( WBC )。</div>

來自澳大利亞 ONA Coffee 的 Hugh Kelly 作爲澳大利亞 16/17 年咖啡師大賽冠軍,代表澳大利亞出戰,並最終從 60 餘名參賽選手當中脫穎而出,獲得了第五名的佳績。比賽中, Hugh 著重展示了他在咖啡領域的創新與研究成果,其中最引人注目的,非那臺世人前所未見的無蒸汽牛奶打發設備莫屬!</div>

在奶基咖啡比賽環節, Hugh 使用了這一種名爲“牛奶雲( Milk Cloud )”的全新設備,他表示該名稱只是臨時決定的,最終命名還有待進一步敲定。</div>

這臺設備是如何工作的呢?在沒有蒸汽的情況下,該設備可以高速旋轉,並通過獨立加熱裝置對牛奶進行加熱, Hugh 表示用該設備打發的牛奶“絲滑、醇厚、美味”。</div>

沒有蒸汽?這是真的嗎?Hugh 在比賽過程中爲評委和觀衆們詳細解釋了傳統的蒸汽打發方法會在牛奶中加入額外的水,從而稀釋其本身的味道。如果沒有蒸汽,牛奶的味道自然會變得更加豐富、絲滑,其原有口味也能夠得到完整保留。</div>

據悉,該設備是由 ONA Coffee 和 Breville 共同開發而成,其理念來自 ONA Coffee 的 Angus Mackie ,是他發現了傳統牛奶打發技法中存在的問題。</div>

“我建議 Hugh 在比賽中使用這種全新設備。” Angus 表示,“人們迫切需要一種全新的牛奶打發方法,以完整保留咖啡的原有風味。”</div>

Angus 花費了數年時間對牛奶加熱、打發原理以及牛奶的化學結構進行研究。</div>
