> 噴空(放汽)蒸汽棒2-3秒。(噴空裏面的水汽水汽會影響打發奶泡)拭擦乾淨水蒸汽(水珠會影響奶沫的口感)。</div>

> 如圖手握奶缸,時刻感受牛奶的溫度變化,預防沒有溫度計仍然可以製作。</div>

一般感覺到燙手,手觸碰奶缸堅持不過3秒,溫度會在50度以上(要注意的是每個人手掌承受能力不一樣所以事先要用溫度計去矯正手掌的溫度)。</div>

打發牛奶利用蒸汽衝打牛奶,使液體狀的牛奶打入空氣。利用乳蛋白的表面張力作用,形成許多細小泡沫。讓液態狀的牛奶體積膨脹,成爲泡沫狀的牛奶奶泡。在發泡的過程中,乳糖因爲溫度升高,溶解於牛奶。並利用發泡的作用使乳糖兌在奶泡之中,而乳脂肪的作用是讓這些細小的泡沫形成安定的狀態。這些牛奶泡在飲用時細小泡沫泡沫會在口中破裂,使味道跟芳香物質有較好的散發放大作用,讓牛奶產生香甜濃稠的味道和口感。且在與咖啡融合時分子之間較強的黏結力會使咖啡與牛奶充分的結合,讓咖啡和牛奶的特性能各自凸顯出來,而又完全融合在一起,達到相輔想成的作用。</div>
