蜜處理法,叫做Honey Process或Miel Process,逍稱為Honey Coffee,哥斯大黎加(Costa Rica),巴拿馬(Panama )和臺灣等地的咖啡園都有採用此處理法。</p>
<p>
蜜處理法是一種介於日曬法和水洗法中間的處理方式。它讓咖啡保留了水洗的乾淨,儘管明亮度下降明亮,但增加了咖啡的甜度與焦糖味。蜜處理的豆外觀帶有明顯的黏質層。可是蜜處理法很依賴當地氣候,天氣一定要乾燥與有充份的日照,否則不適合蜜處理法。</p>
