把烘焙後沒多久的咖啡拿來萃取,你會發現出現極多的<a href="http://www.gafei.com/yishikafei/20180314116269.html">crema</a>,但可惜的是,它也會以較快的時間消失。品嚐這種咖啡時,舌頭所感受到的感覺會與喝碳酸汽水時一樣。由於烘焙時產生的氣體溶於水中,反而會出現刺舌苦味或是澀味等。</div>

由此可知,即使是新鮮的咖啡,也並不能說全都是好的咖啡,仍然要花心思妥善養豆纔行。</div>

根據烘焙程度的不同,咖啡豆養豆的時間也有些不同。將咖啡放在隔絕光及氧氣的狀態下,最少放個3——4天甚至一週以上,讓咖啡豆內部烘焙時所產生的氣體自然地排出,使用這樣的咖啡豆就能做出美麗<a href="http://www.gafei.com/yishikafei/20180314116269.html">crema</a>的好咖啡了。</div>

在萃取後穩定的狀態下,<a href="http://www.gafei.com/yishikafei/20180314116269.html">crema</a>大概厚度3——5mm時,纔是時間最佳的狀態。</div>

●油脂對口感的影響,我分享我的經驗如下:</div>

1. 假設用Esp意式機打出來後有Crema但用水沖淡馬上喝,Crema浮在上面,喝起來沒什麼差別(很接近賽風與手衝)</div>

2. 假設用Esp意式機打出來後有Crema但放入保溫杯,例如有陶瓷內膽不是不鏽鋼的那種,放了一個上午,Crema會慢慢融回咖啡液中,此時的口感比起item 1 會多了Body比較重,比較濃稠些,口感就是不太一樣,風味也比item 1 來得重</div>

3. 假設有打奶泡混合著喝,Crema與奶泡是好朋友,奶泡+Crema+咖啡液 vs 奶泡+咖啡液(沒有Crema),口感我只能說有差 我喜歡前者</div>

4. Crema與肉桂是好朋友,沒有Crema的咖啡液加上肉桂,看起來就格格不入,有Crema的咖啡液加上適量肉桂粉簡直是天作之合,雖然很多人不喜歡肉桂的味道,但看了肉桂的功效且喝了一杯有Crema混肉桂粉的黑咖啡你可能會愛上它</div>

5. 相同的豆子要新鮮才比較榨得出Crema,榨不太出Crema的豆子相對比較不新鮮,新鮮與不新鮮 口感當然有差,後者變得空洞(以前只能意會,現在能夠體會)只剩下類似烤花生的味道(或者是醃製櫻桃味道,每個人味道記憶不同,抱歉我很難描述),有些廠商還標榜是有堅果風味,還把空洞空虛的咖啡形容成一種風味(好厲害的行銷),我喝到一口整杯會倒入花圃中,不想白白浪費我的一天一杯咖啡的額度。</div>
