background-repeat: no-repeat no-repeat;"> <div> 儘管打奶泡的方法有很多, 但用ESPRESSO打奶泡的方法對新手來說是最容易成功的方法之一, 即先打量再打綿。</div> <div> </div> <div> 1, 奶泡的製作</div> <div> </div> <div> 。製作步驟</div> <div> </div> <div> (1) 把冰凍好的 (約5C) 牛奶約225克倒入奶泡壺內 (約是奶泡壺的1/3)。</div> <div> </div> <div> (2) 打開蒸汽管, 把蒸汽管放入奶泡壺之前先讓噴嘴噴一下蒸汽, 這樣既可以預熱蒸汽管, 又可以將管內蒸汽集結成的水沖掉, 然後淺淺地將蒸汽嘴以30——40度角放入牛奶表面下一點點 (噴嘴頭插入牛奶深約0.7釐米處) 或是將鋼杯傾斜30——40度角, 插入位置在中心靠左1/4處 (也可以靠右) 。蒸汽管離奶杯的內壁面約一個手指的距離, 這樣做的目的是能形成漩渦, 如果蒸汽管在牛奶表面下太深, 則奶杯中不會產生漩渦, 牛奶只會加熱, 而不會出現漂亮的奶泡。</div> <div> </div> <div> (3) 然後打開蒸汽機開關 (牛奶控制鍵), 但不要開得過大, 否則牛奶泡沫尚未形成牛奶就已沸騰, 再也打不出泡沫了。同樣也不能太小, 蒸汽不足也會打不出泡沫。通常是按鈕先開一半, 等牛奶對流後再將控制鍵開到最大化, 剛開始會聽到 “吱吱” 的聲音, 感覺溫熱時 (或認爲奶泡足夠量時) 漩渦明顯出現在表面, 此時奶泡量會上升, 同時鋼杯要下降 (噴嘴頭插入深度一直保持0.7釐米的位置), 這樣做的目的是讓奶泡打的綿密一些。直到打發奶泡升至奶泡壺的九分滿或溫度快達到65C時就可以了。如果發出”鋸鋸”的聲音, 而且特別刺耳表示打發錯誤。</div> <div> </div> <div> (4)<span class="Apple-tab-span" style="white-space:pre"> </span>杯子微燙時, 關掉蒸汽馬上移開鋼杯, 如果再繼續打的話, 會使泡沫過硬。把硬的奶沬倒進咖啡時它和咖啡不會混在一起, 而是像蓬鬆的, 打過的鮮奶油一樣堆積在咖啡上面。如果打的時間再長一點的話, 它會分層, 90%是流動的牛奶, 以及一個浮在上面的厚厚的硬奶沬蓋子。當倒到咖啡裏時, 牛奶會從拉花杯中先流出來, 加熱過度時, 也會導致奶泡消失。奶泡打好後放置的時間不能過長, 不然也會分層。打完奶泡的溫度爲65%左右, 打奶泡時間在8——15秒。</div> <div> </div> <div> 奶泡打好後的質地 : 既不是粗糙的泡沫, 也不是軟綿綿, 輕飄飄的泡沫。理想的奶泡, 應該是質地綿密, 倒出來時就像倒酸奶一樣, 整體上濃稠柔滑, 謁人感到適度的厚重感。</div> <div> </div> <div> (5) 打完奶泡接著要清潔機器。打開蒸汽, 抽出蒸汽管, 噴出殘留牛奶。否則牛奶乾涸會阻塞管口, 滋生細菌。擦拭蒸汽頭上的奶漬, 最後把蒸汽頭歸位。</div> <div> </div> <div> 。奶泡的使用</div> <div> </div> <div> 在奶泡壺裏呈現的狀態時 : 上層是浮著的奶泡, 下層是熱牛奶, 如果是用來拉花, 就要用手握著奶泡壺, 將奶泡壺的底部在桌子上震動幾下, 並手持奶泡壺按順時針方向抱晃奶泡壺迴旋幾圈來消泡, 其目的是讓打好的奶泡組織更綿密, 讓壺佞的泡沫和牛奶更好地融合在一起, 再把表面較粗的奶泡舀出來, 接下來就可以拉花了。</div> <div> </div> <div> 如果按照以上的步驟去做了奶泡還是打得不怎麼好, 除了牛奶本身的原因之外, 只有兩個原因 : (1)蒸汽不夠, (2)蒸汽噴嘴的角度, 深度與牛奶的旋轉不對, 注意這兩個因素, 基本問題就可以解決。初學者常會因注意力不集中, 導致把蒸汽管處於牛奶表面上方, 而不是剛好在水面下面。這樣做就會出現牛奶飛濺, 產生較大的奶泡。這樣也能得到拉花杯中的一大堆的奶沬, 但口感會很差。</div> <div> </div> <div> 2, 初學者打奶泡的注意事項</div> <div> </div> <div> 奶泡打發成功的關鍵有以下因素。</div> <div> </div> <div> 。牛奶的選擇</div> <div> </div> <div> 牛奶的選擇也就是對牛奶乳脂肪的選擇。現在市面上有3種牛奶: 一種是無脂牛乳, 脂肪含量小於0.5%, 一種是低脂牛乳, 脂肪含量在0.5%-1.5%, 一種是全脂牛乳, 脂肪含量大於3%。通常拉花用的牛奶是脂肪含量在3%左右的全脂牛奶, 因爲脂肪越少的牛奶, 打出的奶泡越硬, 而我們想要的是順滑的奶泡。一般來話, 鮮奶的品質不是很穩定, 冬天的鮮奶比夏天的好打。如果夏天的牛奶怎麼都無法打出漂亮的奶泡, 也可能不是技術的問題, 而是牛奶本身純度問題。</div> <div> </div> <div> 。溫度</div> <div> </div> <div> 打奶泡所使用的牛奶, 事先需充份冷藏 (至少2天以上) , 牛奶的最佳儲存溫度在4C左右。充分冷藏的目的是用來緩解打牛奶時溫度上升的速度, 使用意式咖啡機, 蒸汽壓力會很大, 牛奶在十幾秒就會變熱, 溫度超過65C, 而當牛奶溫度超過65C時, 牛奶中的成份就會變質走味, 從而影響口感 (奶香味會失去)。超過80C 時就會打破牛奶中的蛋白質結構, 導致打發失敗。</div> <div> </div> <div> 。時間</div> <div> </div> <div> 爲了避免牛奶溫度超過65C, 打奶泡杯時間不宜過長。因此, 使用功率大的意式咖啡機打奶泡, 時間要控制在15秒內。當然, 有時也會因咖啡機的不同而定。</div> <div> </div> <div> 3, 如果萃取咖啡</div> <div> </div> <div> 。壓粉步驟</div> <div> </div> <div> (1) 在磨豆機上磕粉 (見下頁圖1),</div> <div> </div> <div> (2) 用中指輕壓手柄中的咖啡粉末, 受力均勻 (圖2),</div> <div> </div> <div> (3) 再次下粉成山狀,</div> <div> </div> <div> (4) 抺去突出的小山粉末,</div> <div> </div> <div> (5) 用壓柄輕壓 (圖3)</div> <div> </div> <div> (6) 輕輕敲打 (建議用手輕拍周邊, 圖4)</div> <div> </div> <div> (7) 加大壓柄往下壓的壓力 (多接觸不同配比的豆子, 不同品牌的設備壓粉的力度</div> <div> </div> <div> 都不一樣)</div> <div> </div> <div> (8) 輕壓旋轉 (旋轉時不需要用力) , 把表面打磨光滑後提起</div> <div> </div> <div> (9) 用手抺去手柄上的剩餘咖啡粉末</div> <div> </div> <div> 。 壓餅詳解</div> <div> </div> <div> 壓餅前首先要大概瞭解一下咖啡的品質, 配比方法, 口味, 烘焙程度, 咖啡粉的粗細, 設備的性能。根據上述不同的條件決定下壓的力度。通常情況下咖啡粉比較細, 加壓時, 力量不要太重, 否則水不容易通過, 會造成莘取過度, 反之如果咖啡粉比較粗, 就要壓得密些, 否則水流太快, 咖啡會有生澀的淡味 (圖5)</div> <div> </div> <div> 小貼士 : (1)我們一般用的是半自動咖啡機, 它的製作壓力在0.8——0.9MPa (根據不同的豆子上下浮動0.1MPa)。水通過咖啡粉浸溼後, 通過0.9MPa壓力再把水份從咖啡粉內部擠出, 這樣咖啡粉本身90%的物質就可以基本上被榨取出來。 (2)虹吸壺, 滴濾壺沒有壓力, 只能壓榨出咖啡本身70%左右的物質 (咖啡表面溶於水的部分), 而咖啡內部的成份只能可望而不可即了。</div> <div> </div> <div> 。下壓制作原理</div> <div> </div> <div> 大部份的咖啡師都會在壓粉後旋轉 (施力旋轉而不施力旋轉兩種), 目的是讓粉面光滑平整, 讓咖啡粉互相 “咬合”, 使之更好抵禦來自咖啡機0.8——0.9MPa的水流衝擊, 但當第一次壓粉後是否該敲擊粉碗, 使粘在粉碗邊上的粉末掉下, 又是個值得思考的問題, 幾年前絕大部份咖啡師都會習慣性地在第一次填壓後敲擊粉碗, 而最近幾年這個敲擊動作被越來越多咖啡師所否定, 最根本原因在於敲擊粉碗會有一定程度的 “裂縫” 出現, 雖然粉餅表面已經壓平了, 但在敲擊中粉餅的內部會出現細小的裂痕, 這個裂痕無法抵禦0.8——0.9MPa壓力的水流衝擊, 水流能很容易地穿過這些部位, 從而導致咖啡莘取不均勻, 也會因流速過快而達不到標準。當然, 絕大多數的咖啡師都是用手輕敲來避免 “裂縫” 現象, 就是在壓粉後做個上提旋轉的動作, 這樣做的好處在於可以把粘在粉錘邊上與粉碗邊的殘粉 “拉” 下來。</div> <div> </div> <div> 。莘取時間</div> <div> </div> <div> 正常莘取時間是30秒左右, 如果壓粉力量過度, 莘取時間會比起正常莘取增長30秒或更多。成品質量會出現油脂薄, 焦色的油脂, 口感較酸等過度莘取的現象。另外, 咖啡置於咖啡機上保溫的時間, 最好不要超過20分鐘, 以免失去原味。煮咖啡前, 要多一步暖機動作, 這樣會讓咖啡更香醇 (圖6)</div> <div> </div> <div> 研磨咖啡豆, 將研磨好的咖啡粉放至濾器內</div> <div> </div> <div> 將濾器內的咖啡粉抺平</div> <div> </div> <div> 用填壓器壓平咖啡粉</div> <div> </div> <div> 用填壓器敲濾器的下緣, 讓所有咖啡粉分佈平均</div> <div> </div> <div> 莘取好的咖啡</div> </li> <li style="padding: 0px 0px 0px 20px;
