浙江在線08月04日訊 習慣了咖啡機的瞬間蒸汽萃取，你可有心情坐等咖啡師現場手衝一杯限量版的咖啡?不少消費者的回答是肯定的。近日，星巴克旗下臻選品牌登陸杭州，開出杭州首家門店，手沖和臻選咖啡豆爲亮點，此舉暗合當下手衝咖啡熱潮，不比價格，比情懷，一些限量版咖啡豆到店即刻售罄。</p>

黑圍裙坐鎮手衝咖啡需要4分鐘</p>
<p>
此次杭州首家星巴克臻選門店選在了濱江區的天寓店，晚上七點，記者到達天寓店，人氣很旺，與傳統星巴克的門店不同，這裏的門店操作檯採取半開放格局，在操作檯還有專屬的手衝咖啡臺，讓顧客與咖啡師之間有更多的交流，消費者可以在手衝咖啡臺，看到一杯咖啡的全部操作過程。</p>
<p>
住在濱江的姜小姐專門爲手衝咖啡而來，她說：“因爲是半開放空間，所以我有什麼不瞭解手衝方面的問題，都可以詢問咖啡師，還是挺有收穫的。”</p>
<p>
記者看到在操作檯，穿着黑圍裙的星巴克咖啡大師通過準備、預熱、配量、研磨、調製等各個步驟，爲客人逐一呈現每一款臻選咖啡的獨特味道。比起以往咖啡機的瞬間蒸汽萃取，一杯手衝咖啡誕生大致需要4分鐘。</p>
<p>
據瞭解，目前在首家臻選品牌門店，有兩款限量咖啡豆售賣，有烤胡桃和可可粒風味的哥倫比亞託利馬臻選咖啡，以及富有黑胡桃和焦糖風味的祕魯亞馬遜咖啡，一包咖啡豆售價在158元，略高於傳統星巴克咖啡豆。</p>

咖啡市場競爭激烈小衆市場撬動大人羣</p>
<p>
就在星巴克全國各處開設臻選品牌門店的同時，哈根達斯也在上海開出了全球首家咖啡店，餐飲休閒巨頭競相佈局咖啡市場的背後，是中國咖啡市場的快速擴容。</p>
<p>
咖啡位居世界三大飲品之首，也是世界上除石油外的第二大貿易商品。據統計，目前全球咖啡豆銷量每年約800多萬噸，並且保持每年2%的增速，中國的咖啡消費以每年15%的速度在增長。</p>
<p>
“目前中國人均每年的咖啡消費量僅爲5杯，即使在北上廣，也只有20杯，和近鄰日本的人年均消費200杯、韓國的人年均消費140杯差距甚大，所以咖啡市場的各種形態和模式大有可爲。”杭州詩夏咖啡負責人樓波音介紹。</p>
<p>
快速擴容的市場之下，需要更加新穎便捷的槓桿形式撬動。近來，杭城不少咖啡館都推出了手衝咖啡教程，同時以自己烘焙的咖啡豆，培養口味市場。樓波音早在三年前就開始了手衝咖啡的教程，以往都是咖啡館派學員進行學習，而最近，他發現個人學員多了不少。</p>
<p>
“因爲手衝咖啡器具簡單，比起咖啡機動輒好幾千的投入，手衝咖啡操作便捷，更容易帶到家庭和辦公室，所以學習的人不少。”樓波音說。而據業內人士預估，隨着韓國咖啡館的開店熱潮過去，更注重操作過程和咖啡豆風味的手衝咖啡，將迎來新的商機。(杭州日報)</p>
