貌似不起眼的咖啡豆是其實是世界上交易最活躍的大宗商品之一。看看美國的咖啡消費統計數據你就明白了。</p>

據2015年蓋洛普民意調查，64%的美國人每天至少喝一杯咖啡，平均每天喝2.7杯。美國每年進口約12.7萬噸生咖啡豆，美國年人均消費咖啡超過4公斤。</p>
<p>
對於大多數來說，早起喝一杯咖啡是必須的。我(本文作者)發現了一個有趣而又和有點令人不安的現象，有關生態學、經濟學、全球化和金融，所有都喝咖啡的人都應該有所瞭解。</p>
<p>
走出樹蔭</p>
<p>
自上世紀70年代開始，許多拉丁美洲咖啡種植園開始轉型，即所謂的“科技化”生產系統。爲了對付病蟲害爆發，當時許多巴西種植戶開始尋求新的易種植的咖啡樹品種。</p>
<p>
國家和地方政府甚至是一些援助機構如美國國際開發署(USAID)支持鼓勵農民砍伐樹木，讓咖啡樹受到太陽的直射。這些被選中品種易於管理且更能抵抗病蟲害，也很少需要使用化學殺菌劑。</p>

<p>
隨着咖啡的需求量增長，咖啡開始大規模的種植，咖啡樹在充滿陽光的環境下成長，這意味着生物多樣性會更少，土壤會更加貧瘠。</p>
<p>
到了上世紀90年代末，陽光栽培系統(減少遮蔭)佔哥倫比亞近70%的國土面積，佔哥斯達黎加40%的國土面積。</p>
<p>
這些科技化改造地塊要比傳統的種植方式產量高5倍，但這也帶來了明顯的環境問題。在所有的農業生態系統之中，傳統的樹蔭咖啡農場已被證實存在最高水平的生物多樣性，特別是對於昆蟲和候鳥。</p>
<p>
此外最近的研究發現，從種子到杯子，每杯咖啡使用約140升的“虛擬水”，是指用於灌溉、處理、運輸以及消費所用的水量。陽光種植系統要比傳統的樹蔭種植系統使用更多的水。</p>
<p>
“虛擬水”指在生產產品和服務中所需要的水資源數量，即凝結在產品和服務中的虛擬水量。</p>

因爲放棄了原來更平衡的生態系統，科技化咖啡需要更多的化學農藥防治害蟲。這些科技化咖啡種植業需要更多的化肥來彌補土壤的養分缺失。使用這些化肥農藥可以影響土壤健康，對生物多樣性產生長期的不利影響。</p>
<p>
不平等交換</p>

咖啡生產的核心技術是其農業工業化模式，這從多方面加劇了剝削，這種剝削存在於北半球的消費者與南半球的生產者之間，這就是所謂的“第一世界”對“第三世界”的剝削。</p>
<p>
社會科學家們對這種南北不平衡研究了一個多世紀，現在這種不平衡被“綠色”壁壘重新定義。發達國家對發展中國家提出“綠色足跡”要求。簡單地說，就是工業化國家利用別國的生態承載力來抵消本國消費對環境的影響。</p>

何時消費者纔會願意購買更昂貴的樹蔭咖啡或者公平交易咖啡?</p>
<p>
大量的統計研究也證實了這個觀點。社會學家James Rice發現那些中低收入國家對北部國家的咖啡貿易出口比例越高，而國內資源消耗量越少。</p>
<p>
同樣地，他的同事Andrew Jorgenson也驗證了這個結果，同時又有發現了一個有趣的現象：從1975年到2000年，北方進口商與南方出口商之間的相互關係變得更加不平等。在Jorgenson研究的樣本中超過1/3的國家是主要的咖啡生產國，包括哥倫比亞、巴西等咖啡出產巨頭，還有哥斯達黎加、肯尼亞、越南和墨西哥等國咖啡出口收入同樣佔比很大。</p>
<p>
最近社會學家Kelly Austin發現，即使整體控制出口農業對咖啡的依賴，某個國家的GDP越是依賴於咖啡出口，其破壞砍伐森林現象也就越嚴重，相比其它農業生產模式，依賴咖啡種植出口的農業模式的飢餓程度和受教育程度也更差。</p>
<p>
要改變南北國家間咖啡貿易的高度不平等關係，社會生態開發也需要有多樣式。</p>
<p>
有更好的方式嗎?</p>

好在一些有助於提高意識的活動如雨後春筍般地湧現，讓消費者可以選擇更公平的咖啡。</p>
<p>
公平貿易認證爲農民保障咖啡的基本價格，要求工會或商業合作社鼓勵可持續的農業實踐。如今時興一種新的運動 -- “直接貿易”，買家們派代表直接到咖啡農場觀察其實踐，以建立起長期的貿易關係。</p>
<p>
所有這些都會給生產者更多的回報，激勵他們種植更好更環保的咖啡。然而這種依賴於消費需求和意願的更高價格可能很快就會枯竭，生產商只有提供更高品質的咖啡，消費者才願意花更多的錢。</p>

持久的改變將需要國際社會和咖啡種植當地的經濟和政治方面共同作出努力。目前這些可替代的貿易系統正在朝正確方向邁進，當今工業社會科學合理公平地進行生態開發非常有意義。</p>
