從去年伊始，在中國互聯網公司百花齊放浪潮的影響下，企業的任何跨界行爲似乎都可以用互聯網思維來理解。各行各業的紛紛通過“跨界”這一極具跳躍性的方式，實現企業的轉型、擴展或方向調整。衆所周知，在2005年前期，狗不理曾一度陷入經營的難題，但在10年後的今天，狗不理一舉收購全球第四大咖啡品牌的在華業務。那麼，狗不理是如何從實現如何從一家陷入困境的老字號餐飲企業轉型，併成功向咖啡行業擴張的呢?</p>
<p>
改制擺脫經營困境，創新鑄造強大品牌</p>
<p>
談到包子，中國人腦海中首先浮現的必然是“天津狗不理”五個字。作爲中華第一包，天津狗不理獨特的皮薄、餡足、18個褶和久久回味在口中的鮮香味，成爲人們對它的第一印象。但對於這個超過150年曆史的中華老字號——天津狗不理來說，也曾經歷過發展的艱難時期。2005年，由於陳舊的管理模式、單一的經營方式和資金的匱乏，使狗不理品牌的發展擴張變得愈發艱難。</p>
<p>
爲了提高老字號品牌競爭力優化國有資產結構，在天津市政府的主持下，狗不理通過公開拍賣的方式整體轉讓給改制成功的天津同仁堂，使狗不理這一老字號品牌由單一國有資本結構轉變爲了混合所有制結構的有限責任公司。從此，狗不理踏上向國際化品牌發展的上行快車道。</p>

在企業改制後，狗不理集團通過改善經營管理，專注於提高菜品質量、服務水平和就餐環境，提高老字號餐廳品質。同時，狗不理通過調整業務發展方向，進入速凍食品和快餐食品領域。天津狗不理投資近3000萬元，定製開發的狗不理包子自動化生產線，讓傳統的狗不理包子借先進技術快速騰飛，實現傳統技藝與工業化生產的完美結合。</p>
<p>
狗不理再次重“新”出發，瞄準咖啡市場</p>
<p>
從2014年起，中國餐飲產業已不再是一路高歌，行業在體制、法規、政府管理等諸多方面的短板已經開始發酵。一方面，餐飲業的發展仍然受到國內外不太景氣的經濟形勢的影響，暫別高增長，利潤空間有所縮小的形勢在短期內也難以扭轉。但另一方面，又面臨着投資加速、消費需求旺盛、市場規範化提高等諸多機遇。在這樣一個挑戰與機遇並存的格局中，狗不理在咖啡市場看到了未來市場的增長空間。</p>
<p>
根據數據顯示，我國咖啡消費市場年增長率爲15%左右，遠遠高於國際市場每年2%的增長速度。而咖啡代表的年輕消費羣體，正式我國正是看好咖啡市場的前景，狗不理集團下決心進軍這一領域。</p>

談到高樂雅咖啡品牌的定位，天津同仁堂股份有限公司、天津狗不理集團有限公司董事長張彥森表示“因爲我們走的是高品質路線，定位基本是在一二線城市，不同於一些咖啡品牌的流水線操作，我們追求的是個性化的高品質。”高樂雅咖啡會根據消費者的不同需求和喜好，爲顧客手工定製“你喜歡的咖啡味道”。</p>
<p>
中西文化的融合也是高樂雅咖啡的一大特色。在張彥森看來，他們要潛移默化地將中國文化更好地融入咖啡文化。譬如咖啡廳作爲第三空間，爲消費者提供消費場所，就要融入中國文化，將其打造成具有中國元素更加溫馨的與衆不同的咖啡廳。</p>
<p>
當然，咖啡戰略只是張彥森打造狗不理多元化的一部分。2014年，在餐飲行業整體增長放緩這一新常態背景下，狗不理新開張了4家門店。2015年，狗不理還拓展了新加坡市場，將這一中國傳統美食推向全球。</p>
<p>
“隨着中國國際地位的不斷提升，像狗不理這樣走出去投資、引進來合作的企業會越來越多。狗不理賣好包子很重要，能夠與時俱進發展、做強做久更重要。”張彥森說。</p>
