白領消費咖啡,買的是作爲精英的存在感,品牌不過是一個載體</p>
<p>
用一句話說,這叫bigger,比情懷還賣錢</p>
<p>
最近又有一個小夥伴信心滿滿地辭職創業了。原諒我用了“又”這個詞,如果你也生活在北京或上海,一定能理解我的感受。這次小夥伴拿來了一種新包裝的咖啡,用他們認爲全世界最好的豆子、北歐的包裝技術,使這看似薄如一貼膏藥的包裝,可以在兩分鐘內萃取出兩杯現磨的espresso並優雅地享用。</p>
<p>
第一次看到這個產品的時候,我確實被產品的設計和優雅吸引了。也許是看到我的表情,小夥伴慷慨激昂地開始描繪產品和市場的大片藍海。當我問到價格的時候,小夥伴輕描淡寫地說,“其實也就和一杯星巴克一樣。但是你看啊,我們用的是國外最好的咖啡豆,全程在XX國生產,專利工藝和包裝。”潛臺詞就是,同樣的價格你可以享受兩倍份量的更高品質咖啡,想想都划算!聽上去挺靠譜,可我覺得有點不對勁。</p>
<p>
想起之前一篇很火的文章,是說星巴克把全國的咖啡館都帶溝裏去了。大意是星巴克在國外賴以成名的“第三空間”概念,在國內卻水土不服,以致於主打情懷和文藝的“慢”咖啡館紛紛成了炮灰。而星巴克在中國通過不斷減少品類,降低門店舒適度等持續提升翻檯率和出杯速度,一躍成爲白領的“快餐”並快速擴張,成爲國內咖啡館的第一品牌,讓CCTV都嫉妒上了。</p>
<p>
以上觀點,我同意一半。服務模式的轉變和精準的定位從來都是不折不扣的殺手鐧。</p>
<p>
沒錯,自白領們開始將咖啡作爲飲料,星巴克等一衆咖啡館確實做出了不可磨滅的貢獻,也確實培養了大批的咖啡愛好者和咖啡師。市場容量的擴大,也不可避免地吸引了更多的資金與品牌進入。所有的數據和報告也似乎都告訴我們,懂咖啡,愛咖啡的人越來越多。藍海變成了紅海,差異化、品牌化也不斷產生。不可否認的是,如同紅酒一樣,市場上的高級咖啡層出不窮,似乎所有的市場調查結果也很樂觀地顯示,消費者喜歡更好的咖啡。越來越多的商家挖空心思只爲能給顧客更好的咖啡,期待可就此借識貨的骨灰粉口碑遠播,大浪淘沙。所以這樣的小夥伴找到我的時候我一點也不意外,他們創業的邏輯很簡單:努力把提升咖啡品質作爲核心競爭力。</p>
<p>
這就是我不同意的那一半。消費者從來沒有告訴過你,他們想要的是什麼。</p>
<p>
因爲,他們自己都不知道。</p>
<p>
也許他們不止一次的告訴你,TA熱愛咖啡、懂得品嚐,對各個品種的咖啡豆簡直如數家珍。因爲在他們眼中,TA就是那個有品位、有情調、有閒情的成功人士,他們希望自己是這樣,也希望大家知道TA是這樣。於是所謂的市場調研裏,消費者表現出來的永遠是他們心裏那個更bigger的自己,那個試圖讓大家都impressive的人。</p>
<p>
這個特點放到現代商業中同樣適用。人們的購買行爲早已不是單純的經濟行爲,而其實是表現行爲。白領消費咖啡,買的是一種身份,是作爲精英的存在感。品牌不過是消費者情緒和態度的載體,而產品則只是爲自己掏錢找的一個理由。這樣說也許有點極端,不過讓我們看看最近紅遍中國的阿姨奶茶,其實也就不難理解了。</p>
<p>
阿姨奶茶和傳統的街邊奶茶店或飲品店最大的不同,在於第一次實實在在地把所謂的養生注入產品。大量地添加固形物如紅棗、血糯、薏仁等顧客早已耳熟能詳的女性滋補食材,很容易給人留下健康和營養的印象。看似簡單的改變,效果大不一樣。雖然還是同樣賣奶茶,但是從消費者一端來說,決策的成本完全不一樣了:第一次有人給了愛喝奶茶的女生一個養生的理由——喝奶茶不是長胖的罪惡,不是應付饞蟲的飲料,而是溫潤滋補的良方。甚至就連男生也更願意掏錢了,因爲這彰顯的是他的體貼關愛,簡直比大姨媽時的紅糖薑茶還要有說服力。</p>
<p>
於是就不難理解有那麼多職場新人喜歡端着一杯星巴克在街上走得如此優雅,也不難理解星巴克當年花巨資升級收銀設備,只是爲了顧客在用星享卡(星巴克推出的會員積分卡)時可以顯示顧客的姓名和星級。而當他們出現在收銀機清晰的大屏幕上時,星享卡便超越了傳統的會員卡,成爲一張星巴克爲你定製的專屬名片。對此我不得不說,星巴克實在是太洞悉和同事一起買咖啡時的感受了!對某些人來說,展示自己每天都喝星巴克,簡直比每天專車上班還要激動。</p>
<p>
用一句話說,這叫bigger,比情懷還賣錢。</p>
<p>
回過頭來看,那些真的花30塊錢買一袋簡裝咖啡的人,我相信你是真的愛咖啡的。可是這樣的人,真的能有多少呢?</p>
<p>
我可以肯定,比問卷上的少。</p>
