	　　10月30日，由普洱咖啡協會主辦的2015百城千館萬人共品普洱咖啡暨第四屆&ldquo;中國普洱咖啡杯&rdquo;世界虹吸壺大賽江蘇蘇州開賽。該項賽事活動自2013年開辦以來，已成功舉辦了三屆，以高規格、強專業、嚴標準的賽事要求得到了國內外咖啡業界的關注與參與，爲國內咖啡從業者搭建了一個展示形象、分享智慧、交流合作、互利共贏的大舞臺。</p>
<p>
	　　2015第四節&ldquo;中國普洱咖啡杯&rdquo;世界虹吸壺大賽賽事將陸續在成都、武漢、蘇州、臺北等多個城市舉行分賽區比賽，每個賽區前3名選手代表各分賽區參加在普洱舉行的年度總決賽。與此同時，大賽組委會將在全國主要一線、二線城市著名咖啡連鎖店同時開展共品普洱咖啡分享推廣活動，旨在讓人們在不同環境和氣氛中體驗普洱咖啡的醇厚和香濃，促進咖啡文化的弘揚與傳播。</p>
<p>
	　　經過前期預賽，決賽比賽中，江蘇賽區參賽選手展示了超高技藝和嫺熟技能，花樣繁多的新奇創意，讓在場的評委和觀衆都耳目一新，評委就選手在製作咖啡過程中出現的問題和咖啡的口感等方面做出相應的指導和點評，經過激烈的角逐，決出3人將代表江蘇賽區參加在普洱舉行的年度總決賽。</p>
<p>
	　　&ldquo;中國普洱咖啡杯&rdquo;世界虹吸壺大賽舉辦旨在加強中國咖啡師職業技能行業標準規範的推廣。培養和挖掘最親民的靈魂咖啡師。通過樹立咖啡師的人才榜樣，來培養中國咖啡文化理念，帶動中國咖啡消費市場以及咖啡產業的發展和整體提升職業咖啡師技能及服務理念。</p>

	　　虹吸壺概論：</p>
<p>
	　　虹吸咖啡是一種利用水沸騰時產生的壓力來協助烹煮咖啡的方法。咖啡壺分爲上下兩部分，中間以導管連通。待水沸騰後，水轉化爲水蒸氣，蒸氣壓力逼使水透過管子上升，於是開水從導管進入到上壺中，經由攪拌的動作使其於咖啡豆粉混合如泥濘狀。讓咖啡與水充分浸泡後熄滅火源，待下層球內的空氣冷卻後，咖啡液體透過濾布返回下座，此事把咖啡倒入預熱過的杯子內之後便可飲用。</p>
<p>
	　　在虹吸式咖啡製作方法中，咖啡師需要在烹煮過程中用竹攪棒攪拌兩次咖啡。</p>
<p>
	　　第一次的攪拌是在下座三分之二的水上升到上座時進行的。這是爲了使磨碎的咖啡粉充分的與沸騰的水融合。</p>
<p>
	　　第二次的攪拌動作(行爲)和第一次一樣，只不過這次是爲了讓咖啡完全的脫氣，進而促進了咖啡的過濾。</p>
<p>
	　　有經驗的咖啡師通過用竹攪棒攪拌咖啡，使得咖啡顆粒完全的脫氣，並且使其逐漸在過濾器上沉澱，堆積(從大而重的咖啡顆粒到小而輕的咖啡顆粒逐漸沉積在濾布上)。</p>
<p>
	　　咖啡的味道與在攪拌過程中沉澱在上壺中的咖啡餅渣的厚度與形狀有直接關係。</p>
<p>
	　　這種技術是基於對虹吸咖啡烹製技術的深刻理解上而進行的，它使得烹製出咖啡更加美味。</p>
