這個皇室一般的咖啡壺迷倒了不少人，有人說因爲它能萃取出咖啡中最完美的部分，尤其是咖啡豆的特性中帶有那種爽口而明亮的酸，而酸中又帶有一種醇香，更可以把這種咖啡的特色發揮得淋漓盡致。也有不少人喜歡它那種帶有一點實驗室味道的精確感。看着水沸騰時上升，萃取成黑色的咖啡下降，一步一步都控制在煮咖啡的人手中，滿足感爆棚。</p>

土耳其咖啡</p>

在土耳其，爲客人煮一杯傳統咖啡是無比崇高的事，有的甚至要提前沐浴、喫齋。這種咖啡將粉磨得非常細，也不濾掉殘渣，在品嚐時，大部分咖啡粉都會沉澱在杯子下面，不過在咖啡中嚐到細微的粉末，也是最爲特別之處。土耳其有一種咖啡算命的習慣，是在喝完咖啡後，將沉澱於杯底的咖啡渣蓋在盤子上，根據其上形成的模樣來占卜當天的運勢。</p>

<p>
越式咖啡起源於法國滴濾咖啡，倒入滾開水，讓咖啡一滴一滴流到盛有煉乳的杯子裏，大約需要10分鐘。這短暫的等待中，在餐廳的露天椅上靜靜地欣賞來往的風景，細細地品味越南咖啡所獨有的甘苦味道，最配合品味那西貢街頭斑駁的法式建築所講述的幽怨往事，一種南方小城的舒適感浸滿身心。</p>

冰滴咖啡</p>
<p>
冰滴咖啡很完美地詮釋了“時間要浪費在美好的事物上”這句話。這種優雅而緩慢的咖啡風格以10秒鐘7滴的速度滴濾咖啡粉，消逝8至10個鐘頭的時光來創造一杯琥珀色的清澈咖啡。冰塊緩慢的融化着從頂層的壺中滴落，完全地浸潤咖啡粉後，可以有效地“扔掉”酸澀，而將每一滴濃郁滑順的絕世味道留在杯中，單是這個過程就是愉悅身心的享受。</p>

摩卡壺意式濃縮</p>
<p>
意大利人bialetti最先製造並建立了這個著名品牌，在意大利，擁有一個bialetti的摩卡咖啡壺，就相當於擁有一個espresso咖啡館。這種經典的意式濃縮咖啡工以快速加熱來萃取，加熱中先是蒸汽衝頂咖啡的嘶嘶聲，轉爲啵啵聲時，手工精製的意式咖啡就完成了。摩卡壺沖泡的咖啡具有濃郁的香味及強烈的苦味，咖啡的表面會浮現一層薄薄的咖啡油，這層油正是意大利咖啡誘人香味的來源。</p>

手衝咖啡</p>
<p>
這種充滿變化的咖啡製法似乎是法國人發明的，而在日本得到了發揚光大。手衝咖啡有一種令人敬畏的儀式感，咖啡粉在水中膨脹並漸漸散發香味的過程讓人有等待日出般的小小澎湃。最原始的咖啡沖泡方法也最講究專業，需要新豆子當時研磨，需要對口味、品種甚至水溫有所瞭解，需要隨時調整沖泡的方式。每個人都不可能泡出兩杯完全一樣的手衝咖啡。</p>
